Chicken ratatouille, a comforting dish that combines tender chicken with a medley of vibrant vegetables.

red peppers 2
(cored and cut into pieces)

zucchini 1
(cut into small pieces)

eggplant 1
(cut into small pieces)

tomatoes 4
(halved)

olive oil 4 tbsp

garlic oil 1 tbsp
-
chicken breast or 8 thighs 4
(with skin)

rosemary 6 stems
-
thyme 6 stems

salt and pepper
Instructions
- Preheat the oven to 200°C. Place all vegetables and tomatoes on a baking sheet. Pour over olive oil and garlic oil and mix thoroughly.
- Place the chicken breasts, with the skin side up, on top of the vegetables and sprinkle with rosemary and thyme. Season with salt and black pepper and drizzle with a little extra olive oil.
- Place in the middle of the oven for about 35 minutes, until the vegetables are soft and the chicken is golden.
