Teff is a gluten-free cereal that is cultivated in Ethiopia, among other places. It’s actually a grass variety with very small grains. The plant is rich in protein, calcium, magnesium, iron, and vitamin C and has a mild, nutty flavour.

Lactose-free milk 450 ml

Whisk together all the ingredients and let stand and swell for about 30 minutes.
- Melt butter in a frying pan and pour in a little batter. Cook on both sides.

Serve with berries and possibly lactose-free lightly whipped cream.
