Instructions
- Add chicken, spring onions, celery, carrot, bay leaf and parsley sprigs to a large pot. Pour in cold water, add salt and pepper, let it come to a boil. Skim off any foam if necessary. Reduce the heat and let it simmer covered for about 20 minutes until the meat is fully cooked.
- Lift up the chicken and let it cool slightly before removing the meat from the bones. Meanwhile, let the broth continue to simmer. Clean the chicken and put the carcass back in the pot. Simmer under a lid for an additional 1 hour. Cut the meat into smaller pieces.
- Strain the broth into a pot, and bring to a boil again. Add noodles and cook quickly. Stir in the chicken pieces, sprinkle with parsley and serve.
- Tips: Add some sliced carrots and finely chopped leeks that will simmer with the broth when you strain it.
