cured or brined salmon fillet 400 g

flake salt 10 pieces

frozen, green peas 200 g
Instructions
- Preheat the oven to 225°C. Cut the salmon into strips. Grease an oven-safe dish. Layer potatoes, salmon, spring onions, and dill in the dish. Season with salt and pepper between layers.
- Whisk together eggs, milk and cream. Pour the mixture over the potatoes in the dish. Sprinkle with breadcrumbs if desired. Bake the salmon pudding in the oven for about 25 minutes.
- Melt the butter and save the clear liquid that forms on top. Boil the peas in lightly salted water for a few minutes. Serve the salmon pudding with clarified butter and peas.
